The cultivation of Kashmir Saffron has been in practice since the 1st Century BC. Each flower is handpicked and its stigma (a strand of saffron) is carefully separated from the flower. Kashmir Saffron is well known globally for its aroma, rich flavor, deep color, and cosmetic and medicinal benefits. It is grown at a high altitude of 1600mtr-1800 mtr above sea level. Kashmir Saffron comprises three major components, that are, crocin, picrocrocin, and safranal. Crocin is responsible for the deep red color of saffron, Picrocrocin for its bitter taste, and safranal for the rich aroma. Kashmir Saffron is an Exclusive GI of Jammu & Kashmir.
